<p>Busy cooks, take heart!&nbsp; It really is easy to have dinner on the table quickly and without a lot of fuss and clean-up.&nbsp; So skip the fast food enticements and make this healthy entree for your family instead.&nbsp; Pan Cooked Salmon with Beans and Spinach Saute is ready in minutes giving you fish, spinach, and beans in no time at all.&nbsp; This meal is great for diabetics, too, as the salmon and beans are both for the diabetic&#8217;s diet. This is much healthier than a bag or box of fast food could ever be and you will feel better about what you are feeding your family!&nbsp;&nbsp;</p>
<p>PAN COOKED SALMON with BEANS-SPINACH SAUTE</p>
<p>3/4 cup chopped onion<br />1 tbsp minced garlic<br />2 tsp sage<br />2 tsp canola oil<br />1 can (cannellini beans, rinsed and drained)<br />1/2 cup chicken broth<br />1/4 tsp salt, optional<br />3 cups baby spinach<br />4 (about 3-oz each) skinless salmon fillets<br />red pepper flakes, optional</p>
<p>In a deep wide skillet, heat half the canola oil. Add the onion, garlic, and 1 1/2 teaspoons of the sage. Cover the pan and cook over medium heat, stirring often, for approximately 5 minutes until the onion starts to soften. Add the beans, broth, and salt,if using. Simmer mixture approximately 10 minutes. Stir the spinach into the beans mixture and cook another 2 to 3 more minutes. Remove from heat.</p>
<p>Rub the salmon with the remaining 1/2 teaspoon sage. Heat the remaining half of the oil in a skillet. Place salmon fillets in the skillet and cook 3 to 4 minutes. Carefully turn the salmon and cook another minute. Remove to serving plates and spoon the spinach-bean mixture evenly over each fillet. Sprinkle with red pepper flakes, if desired. </p>

<p>Squash Apple Casserole<br /> This dish is high in vitamin A, a good source of vitamin C, cholesterol free, and almost sodium-free.</p>
<p>2 1/2 cups fresh winter squash, cut into 1/2 inch slices<br /> 1 1/2 cups cooking apples, pared and cut into 1/2 inch slices<br /> 2 teaspoons cinnamon<br /> 1 teaspoon nutmeg</p>
<p>Alternate layers of squash and apples in an 8&#8243;x 8&#8243; pan, ending with apples on top layer. Sprinkle spices over top layer. Cover pan with aluminum foil and bake in 350 degree F oven for approximately 45-60 minutes until squash is tender. Remove foil and bake another 10-15 minutes to remove any excess liquid that might have accumulated. Cool slightly before serving. Serves 4.</p>

<p>2 Tablespoons vegetable oil <br /> 1 whole chicken, cut up, skin removed <br /> 1 chopped green pepper <br /> 1 chopped onion <br /> 3 minced garlic cloves <br /> 2 chopped tomatoes <br /> 2 1/4 cups chicken broth, low-sodium <br /> 1 bay leaf <br /> 1 cup uncooked rice <br /> 1 cup peas <br /> salt, to taste <br /> pepper, to taste</p>
<p>&nbsp;</p>
<p>In a large skillet heat oil and brown chicken on both sides. <br /> Add green pepper, onion, and garlic and cook for about 5 minutes. <br /> Add tomato, chicken broth, bay leaf, salt pepper to taste. <br /> Cover and cook for 20 minute Add rice, stir well, cover and simmer for 20-30 minutes longer, or until all liquid has been absorbed and chicken is tender. <br /> Add peas, cook until hot.</p>
<p>Yield: 6 servings</p>
<p>Baked Chicken Nuggets</p>
<p>1 1/2 pounds chicken thighs, boneless, skinless <br /> 1 cup cereal crumbs, cornflake type <br /> 1/2 teaspoon Italian herb seasoning <br /> 1/4 teaspoon garlic powder <br /> 1/4 teaspoon onion powder <br /> 1 teaspoon paprika</p>
<p>Remove skin and bone; cut thighs into bite-sized pieces. <br /> Place cornflakes in plastic bag and crush by using a rolling pin. <br /> Add remaining ingredients to crushed cornflakes. Close bag tightly and shake until blended. <br /> Add a few chicken pieces at a time to crumb mixture. Shake to coat evenly.</p>
<p>Serving Size: 3 ounces <br /> Yield: 4 servings</p>
<p>20-Minute Chicken Creole<br /> 1 Tablespoon vegetable oil <br /> 2 whole, skinless, boneless chicken breasts <br /> 1 can (14 1/2 oz.) diced tomatoes with juice <br /> 1 cup chili sauce low sodium <br /> 1 chopped green pepper, large <br /> 2 chopped celery ribs <br /> 1 chopped onion, small <br /> 2 minced garlic cloves <br /> 1 teaspoon dried basil <br /> 1 teaspoon dried parsley <br /> 1/4 teaspoon cayenne pepper</p>
<p>1/4 teaspoon salt</p>
<p>Heat pan over medium-high heat (350 degrees in an electric skillet). Add vegetable oil and chicken and cook until no longer pink when cut (3-5 minutes). <br /> Reduce heat to medium (300 degrees in electric skillet). <br /> Add tomatoes with juice, chili sauce, green pepper, celery, onion, garlic, basil, parsley, cayenne pepper, and salt. <br /> Bring to a boil; reduce heat to low and simmer, covered for 10-15 minutes. <br /> Serve over hot, cooked rice or whole-wheat pasta.</p>
<p>Serving Size: 1 cup <br /> Yield: 8 servings</p>
<p>Baked Fish and Vegetables<br /> 4 frozen white fish fillets or cod or perch (total of 16-20 oz.) <br /> 16 ounces frozen mixed vegetables <br /> 1 small diced onion <br /> 1 teaspoon lemon juice or fresh lemon, sliced thin <br /> 1 Tablespoon parsley flakes &#8211; dried or fresh chopped <br /> 4 10&#215;12 -inch tin foil squares</p>
<p>Preheat oven to 450 degrees. <br /> Separate and place fish fillets in center of each tin foil square. <br /> Combine frozen vegetables and diced onion in bowl and mix. Spoon vegetables around fillets. <br /> Sprinkle with lemon juice (or top with lemon slice) and add parsley on top. Fold ends of tin foil together to form leak-proof seal. <br /> Bake for 10 minutes. Serve.</p>
<p>Serving Size: 4 oz. fish and 1/2 cup vegetables <br /> Yield: 4 servings <br /> Time: 40 minutes</p>
<p>Apple Chunk Cake</p>
<p>1 1/4 cups sugar <br /> 1/4 cup vegetable oil <br /> 2 eggs <br /> 2 cups flour <br /> 1 teaspoon salt <br /> 1 teaspoon cinnamon <br /> 1 teaspoon baking soda <br /> 4 cups diced apple chunks <br /> 1/4 cup applesauce <br /> 2 cups sliced apple to place on cake</p>
<p>Preheat oven to 350&deg; F. </p>
<p> In a large bowl, mix sugar, oil and eggs together. Beat well. <br /> In a separate bowl, combine flour, salt, cinnamon, and baking <br /> soda. Add to egg batter and mix well. <br /> Add apple chunks and applesauce to the batter. Stir to combine. <br /> Coat a baking pan with vegetable oil spray, and pour in batter. Bake until done, about 1 hour. <br /> Place apple slices on top of apple cake and serve.</p>
<p>Yield: 12 servings.</p>
<p>Cinnamon Apples</p>
<p>4 tart apples, sliced.</p>
<p>1 cup sugar.</p>
<p>&frac12; cup water.</p>
<p>&frac12; pound cinnamon candy.</p>
<p>Pare and slice apples into eights. Combine sugar, water and candy to make syrup.&nbsp; Bring to a boil and when sugar and candy are dissolved, add sliced apples.&nbsp; Cook until apples are soft.&nbsp; Makes 4 servings</p>
<p>VEGAN MIXED BERRY MUFFINS</p>
<p>Flour, white, 1.75 cup</p>
<p>Raw sugar, 4 tsp</p>
<p>Baking Powder, 2 tsp</p>
<p>So Good &#8216;Trim&#8217; Soymilk, 1.25 cup</p>
<p>Egg Replacer, 1 serving</p>
<p>Applesauce, unsweetened, 25 grams</p>
<p>Strawberries, frozen, unsweetened, 0.125 cup,</p>
<p>Blueberries, frozen (unsweetened), 0.125 cup,</p>
<p>Raspberries, 0.125 cup</p>
<p>Preheat oven to 400 degrees. Spray a 12-cup muffin tin with non-fat cooking spray. In a large bowl, combine all dry ingredients.<br /> In a smaller bowl- combine applesauce and soymilk.</p>
<p>Chop the frozen <a href="../../../../recipes-articles/grandma-hystad-recipes-bar-mixes-food-information-626729.html">berries</a> into a manageable size.&nbsp; Add wet ingredients to the dry, and stir to combine, adding berries as you mix. Using a 1/4 cup measure, scoop into prepared muffin tin (they should be about 2/3 full), bake for 20-25 minutes (when a toothpick inserted comes out clean). Cool in tin for 5 minutes, then turn out to cooling rack. Serve warm.</p>

<p>CLEANING TIPS</p>
<p>Window Washer</p>
<p>For crystal clear window washer, Mix a tablespoon of cornstarch in a bucket of water, and wipe the solution onto the glass with paper towels.&nbsp; Rinse with clean water. Great for car or house windows.</p>
<p>BABY WIPES</p>
<p>Since heading the market in the 80&#8217;s, these moistened disposable baby wipes proved to be great in and outside the home.&nbsp; From cleaning your hands after changing oil or a tire, clean tools, rub marks off your walls, many, many uses including shining your shoes, wipe with baby wipe and buff with a soft, dry cloth.</p>
<p>To freshen up a smelly drain, just pour a cup of Baking Soda into it, and flush with hot water.</p>
<p>CARPET CLEANER</p>
<p>If you have a cat, get rid of fleas in your carpet and keep carpet, rugs, fresh smelling.</p>
<p>&frac12; cup baking soda</p>
<p>&frac12; cup of cornstarch</p>
<p>&frac12; teaspoon of Rosemary or Penny Royal citronella oil.</p>
<p>Before going to bed mix baking soda, cornstarch, and oil together. Spread evenly across carpet and scrub it into fibers with a stiff brush or broom.&nbsp; Leave over night; vacuum it up in the morning.</p>
<p>NO CATS; Just want to clean carpet substitute any fragrant oil.</p>
<p>Blocked Drains?</p>
<p>Instead of using caustic products (be green and save money) for clearing blocked drains, throw a cup of baking soda down the drain followed by a few jugs of water.</p>
<p>PROPERLY DISINFECTED WATER</p>
<p>After a storm, flooding, make sure water has been properly disinfected before using for cooking, drinking, or brushing teeth.</p>
<p>Use bottled water that has not been exposed to flood waters if it is available.</p>
<p>If you don&#8217;t have bottled water, you should boil water to make it safe. Boiling water will kill most types of disease-causing organisms that may be present. If the water is cloudy, filter it through clean cloths or allow it to settle, and draw off the clear water for boiling. Boil the water for one minute, let it cool, and store it in clean containers with covers.</p>
<p>&nbsp;</p>
<p>If you can&#8217;t boil water, you can disinfect it using household bleach. Bleach will kill some, but not all, types of disease-causing organisms that may be in the water. If the water is cloudy, filter it through clean cloths or allow it to settle, and draw off the clear water for disinfection. Add 1/8 teaspoon (or 8 drops) of regular, unscented, liquid household bleach for each gallon of water, stir it well and let it stand for 30 minutes before you use it. Store disinfected water in clean containers with covers.</p>

<p>FOOD WARNING BACTERIA</p>
<p>Bacteria may be present on products when you purchase them. Raw meat, poultry, seafood, and eggs are not sterile. Neither is fresh produce such as lettuce, tomatoes, sprouts, and melons.</p>
<p> Foods, including safely cooked, ready-to-eat foods, can become cross contaminated with bacteria transferred from raw products, meat juices or other contaminated products, or from food handlers with poor personal hygiene.</p>
<p> Botulism, a life-threatening illness caused by the bacteria Clostridium outline, were reported in the United States. Frozen, fully cooked products were suspected of causing these illnesses. The Food Safety and Inspection Service advises all consumers to handle frozen, fully-cooked products in accordance with these food safety recommendations.</p>
<p> Before buying frozen, fully cooked products carefully inspect the container or package. If the package is punctured, torn, partially opened, or damaged in any other way that might expose the contents to the outside environment, do NOT purchase the product.</p>
<p>Do not purchase frozen products that appear to have thawed and refrozen. Reject all swollen or gassy containers or spoiled foods.</p>
<p>Buy food from reputable dealers, with a known record of safe handling. Buy frozen products only if they are frozen solid and only if stored in the freezer case. Observe any use-by or sell-by dates on the package.</p>
<p> When you open the container, inspect the product. Do not use products that are discoloured, mouldy, or have an off odour. Do not use products that spurt liquid or foam when the container is opened. Do not taste the product to determine if it is safe. <br /> Follow the preparation instructions on the product label. <br /> Handling Possibly Contaminated Products Report any suspect commercial food products to your local health department.</p>
<p> If a suspect food is opened in your kitchen, thoroughly scrub the can opener or other utensils, containers, counters, etc., that might have contacted the food or its container. Discard any sponges or cloths used in the cleanup. Wash your hands thoroughly. Promptly launder any clothing that might have been splattered upon.</p>
<p>&nbsp;</p>
<p>Botulism is a rare but serious paralytic illness caused by a nerve toxin. Symptoms of botulism include double vision, blurred vision, drooping eyelids, slurred speech, difficulty swallowing, dry mouth, and muscle weakness. The illness can cause paralysis, respiratory failure and death. Symptoms usually occur from 18 to 36 hours after eating contaminated food. Anyone concerned about an illness should contact a physician.</p>
<p>Many frozen chicken products, such as chicken Kiev and chicken cordon bleu, may appear to be precooked, but are actually only pre-breaded or pre-browned.</p>
<p>Use a meat thermometer and make sure the internal temperature of the chicken is at least 165 degrees Fahrenheit.&nbsp; . This means really cooking the chicken, in a regular oven or microwave, not merely thawing it.</p>
<p>USE FOOD THERMOMETER</p>
<p>Don&#8217;t rely on looks alone. Bacteria can spread during ground meat.&nbsp; Always use a food thermometer and cook at 160 degrees Fahrenheit when cooking your hamburgers.</p>
<p>RESPONSIBLE DRINKING <br /> If you have teenagers, or in fact any adult, impress on them the risks of driving while intoxicated. Statistics demonstrate many fatal road accidents are caused by drunk drivers. </p>
<p> If you&#8217;re having a Christmas party, provide food with drinks. Offer non-alcoholic substitutes such as fruit, soft drinks. </p>
<p> 2 drinks taken within an hour by a person 100 pounds produces a 075 reading. One drink is equal to about 1.5 oz. of whisky or 2 bottles of beer. The rate of elimination for each hour after drinking has stopped is 015. A 200-pound person, after 1 drink produces a reading of .019, so you can see there is a big <br /> difference due to weight.</p>
<p>BAR MIXES <br /> Apple Cocktail. <br /> &frac12; ounce applejack. <br /> &frac12; ounce apple cider. <br /> &frac14; ounce gin. <br /> &frac14; ounce brandy. <br /> Shake with ice cubes. Strain into chilled cocktail glass. </p>
<p> BLIZZARD. <br /> 3 ounces bourbon. <br /> 1 ounce cranberry juice. <br /> 1 teaspoon lemon juice. <br /> 2 teaspoons sugar syrup. <br /> 4 ounces crushed ice. <br /> Combine in blender until the drink is thick. <br /> Serve straight up.</p>
<p>NON- ALCOHOLIC DRINKS<br /> ORGEAT FIZZ<br /> 1 &frac12; ounces orgeat syrup<br /> &frac12; ounce limejuice<br /> Club Soda<br /> Shake orgeat and lime juice with ice cubes. Strain into fizz<br /> Glass.&nbsp; Add ice cubes. Add soda to glass. Serve with straws.</p>
<p>ICED COFFEE</p>
<p>There are just as many ways of making coffee, as there are different brands. Here are some general rules.</p>
<p>For good results measure water and coffee.</p>
<p>2 tablespoons coffee to each 1 cup</p>
<p>Make coffee just before serving</p>
<p>Make coffee double strength and pour the hot coffee over ice in a tall glass.&nbsp; As the ice melts, it will dilute the coffee. Top the glass with whipped cream or vanilla ice cream.</p>

<p>If she doesn&#8217;t already have it, get her the French Laundry cookbook.  It&#8217;s one of the nicest restaurants in the world and all of the great cooks I know have (and love) it.  The recipes are pretty complex so it isn&#8217;t a good cookbook for beginners.  If she enjoys cooking, but isn&#8217;t great at it, buy her a Williams-Sonoma cookbook.  Those have great recipes, but they aren&#8217;t nearly as complex.</p>

When quinoa seeds are cooked, the shell of the grain (seed) separates from the center, creating the dual texture. It has a nutty flavor and is a perfect substitute for rice or pasta.</p>
<p>Quinoa comes in several different varieties including yellow, orange, pink, red, purple and black. The most common variety is the yellow kind, which becomes semi transparent when cooked. The leaves of the quinoa plant are also edible and nutritious, although they are sometimes hard to find.</p>

<p>Quinoa provides high concentrations of calcium, manganese, magnesium, iron, tryptophan, copper and phosphorus. Since they are seeds instead of grains, they have a higher good fat content. The fats in quinoa are heart healthy and beneficial for brain functioning.</p>
<p>Quinoa Helps Curb Cravings</p>
<p>Unlike other grains, quinoa won&#8217;t spike your blood sugar and leave you craving more carbohydrates. The fat and protein content in quinoa are balanced with the carbohydrates, so it will leave you full and satisfied. It will fill you up and keep you fuller for longer than rice, pasta or breads.</p>
<p>How to Cook Quinoa</p>
<p>Quinoa makes a quick meal and is easy to prepare. Rinse off the seeds to remove the coating, and then place the quinoa in a pot (2 parts quinoa to 1 part water). The seeds cook in about fifteen minutes. They can also be prepared in a rice cooker. Adding broth instead of water or adding veggies is a great way to liven up the flavor of the dish.</p>
<p>Quinoa flour is an easy way to get more of the grain into your diet. Since it is gluten-free, it makes a great substitution for people with celiac disease or those who just want to get the benefits of the grain. In order for bread and other baked good to bake properly, you can only substitute 75% quinoa flour for wheat flour. So if a recipe calls for 1 cup of flour, you can use three-quarters of a cup of quinoa and quarter of a cup of wheat. Even with this mixture, you&#8217;ll still be reaping the rewards of eating quinoa.</p>

<p>Over the past year I have cut most all white flour and white sugar items from my diet and eat primarily a low fat, low cal, whole foods diet.  I&#8217;m learning about new grains, but am becoming overwhelmed by the endless types of flours available.  For instance, Bobs Red Mill offers everything from coconut to oat to quinoa flour.</p>
<p>What is the best way to learn which flour is best for which recipe?  Also, are there any sites that you can recommend that provide recipes that are low fat, low cal and use these healthy grains in the process?  I&#8217;m hoping to begin to use these grains and cut the wheat from my diet.  Is that possible and if so, what are the best resources available?</p>
<p>P.S. I&#8217;m fairly new to the kitchen and don&#8217;t have a lot of spare time, so I prefer to keep recipes and food prep fairly elementary!!

<p>there is no &#8220;Rapeseed&#8221; oil.  &#8220;Rapeseed&#8221; oil is canola oil.  it comes from the rapeseed plant.  Named canola oil because nobody would want to buy an oil called &#8220;Rapeseed&#8221; oil, and it first came from Canada.  if for frying, then you want to concern yourself with smoke points and flavor.  your best alternative would be grapeseed oil, and a fair substitute would be vegetable oil.  these two would also work for baking.</p>

After many decades of cooking and many tries of  various cookware, I&#8217;ve come around to the stainless steel ware.  Here&#8217;s why.  All cookware with non-stick surfaces eventually wear out and lose much of their non-stick properties.  They then have to be replaced. They also pick up odors and flavors and can affect the flavors of  foods cooked afterwards.  So, they are more expensive to begin with and also are more expensive by far in the long run because of this replacement feature.  That&#8217;s  very good for the cookware makers, but not for the cook.</p>
<p>A high quality stainless steel set will last a lifetime.  You&#8217;ll only have to buy it once.  What you are looking for is a highly polished surface with very smooth rivets and an aluminum or copper insert in the base.  Heavier is better than lighter.  And flat bottoms are better than rounded for cooking on ceramic  cooktops.</p>
<p>I have a mixed assortment of expensive and cheap stainless.  For pots which will be used for steaming veggies, soups, oatmeal, stews, rice, you don&#8217;t need to spend much money.  A cheap Walmart stainless  pot is as good as the most expensive one  for these uses.  But for pans in which you&#8217;ll be cooking omelets, fried  chicken, chops, etc., you should invest  in the best you can afford with heavy gauge steel and copper inserts if you can find them.</p>
<p>And  for roasting in the oven, why you can easily get by with one of those cheap porcelain covered poultry roasters.  You&#8217;ll also need a stock pot for cooking spaghetti and larger quantities of chili, soup, etc., and a crock pot for slow-cooking  meats and stews.</p>
<p>So, here&#8217;s my advice.  Buy a very expensive pair of stainless stovetop pans, an eight inch and a ten inch, with glass lids.  Then go buy a couple of cheap Walmart stainless pots with aluminum clad bottoms, a small one and a larger one, also with glass lids.  While at Walmart buy a cheap medium sized porcelainized turkey roaster and a cheap enameled stock pot with a strainer insert.  Add a cheap crock pot with a removable/washable insert&#8230;and you have a lifetime of good functioning cooking utensils for around $250 or less.</p>
<p>A word of warning.  When cooking with stainless you must use lower temperatures and cook more slowly.  You should buy some &#8220;Barkeepers Friend&#8221; or other non-abrasive cleaner to keep them highly polished inside.  You&#8217;ll have to use cooking spray or oil with them, but not very much if you keep the heat low.  Use wooden or silicone utensils with them to keep them  as free of scratches  as possible.  Scratches cause sticking.</p>
